       Chicken stuffed with rice

the ingredients :

A medium-sized chicken.

One hundred grams of peas.

¤ Carrot, medium size, cut into small squares.

¤ A medium-sized onion.

¤ Almonds peeled and fried in vegetable oil.

¤ Roasted pine nuts in vegetable oil.

¤ Two hundred and fifty grams of minced meat.

¤ Two tablespoons of tomato paste.

¤ cup of Egyptian rice.

¤ lemon juice.

¤ Three tablespoons of olive oil.

¤ A teaspoon of black pepper.

¤ A tablespoon of mixed spices.

How to prepare :

● Bring the chicken and wash it well with cold water and salt, then rub it a little with salt and leave it for ten minutes.

● Bring the onion and cut it into small pieces, and put it in a frying pan with a little vegetable oil on the fire, and stir constantly until it turns golden.

● Add the minced meat, and stir with the onion until it becomes soft.

● Prepare the rice and wash it with cold water, then soak it in warm water for twenty minutes.

● Bring the peas and add them to the minced meat and stir a little.

● Add the chopped carrots to the rest of the vegetables and meat, and add the mixed spices, black pepper, and salt.

● Cover the pan until all the vegetables are cooked.

● We prepare the rice that has been previously soaked, and put it on the fire in a wide saucepan with a little oil, black pepper and water, stir and cover it until it is cooked.

● We prepare the chicken and wash it of salt well, then we prepare the mixture of minced meat and vegetables, and then put it in a flat tray until it cools, add the cooked rice and mix well.

● Put a little salt inside the chicken, a pinch of black pepper, and put the mixture inside the chicken until it is completely filled.

● We bring the toothpicks and tie the ends of the chicken with them so that they close.

● Put the chicken in the tray, add tomato paste, salt, spices, lemon and water, and coat the chicken completely from all directions.

● We cover the chicken with tin foil and put it in the oven and leave it until it is cooked, which needs about two hours until it reaches full maturity.

● Take it out of the oven and serve it hot with rice and cold salads.
