Quiche is one of the famous French dishes. It moved to the countries of the Maghreb, especially Algeria. The quiche dish has become one of the traditional Algerian dishes that are prepared on many occasions. To get a light golden color, the quiche can be stuffed with various fillings such as chicken stuffing with cream, cheese, spinach stuffing, and meat quiche as desired.

How to prepare quiche dough
Put the flour in a bowl, add the cold butter cut into small cubes and rub the flour with butter using your hands well.
After the butter mixes with the flour, add the egg and knead all the ingredients together. At this stage, cold water can be added gradually until the dough comes together, but there is no need to add water if the dough has a good consistency.
We leave the dough rest in the refrigerator for half an hour so that we can stretch it well without cracking.
● How to prepare the quiche filling
We put a little vegetable oil in a hot pan, add the chopped mushrooms to it and leave it on the fire a little until it wilts and takes on a golden color.
We add both: eggs, cream cheese, cooking cream, carrots, bell pepper, olives, mushrooms, salt, paprika and oregano in a bowl and mix well until the ingredients are mixed together.
● How to prepare the quiche
Spread the dough into a tart pan with the included edges. A large tray or several small trays can also be used as desired.
We poke holes in the bottom of the dough with a fork.
Put the desired amount of filling in the tart pan on top of the dough.
Place the quiche tray in a hot oven for half an hour or until a golden color is obtained.
The quiche dish is served as a side dish and served with salad and soup.
