Coconut tablets, is it just for sweetening?


the ingredients :

¤ Half a kilo of coarse coconut.

¤ Four eggs of medium size.

¤ Two tablespoons of liquid vanilla.

¤ A tablespoon of natural lemon juice.

¤ Half a cup of powdered sugar.

¤ a tablespoon of butter.



How to prepare:

● We prepare the eggs, then we separate the whites from the yolks. The whites are whisked with an electric whisk until it becomes white and doubles its volume.

● Then add the liquid vanilla and beat again, add the powdered sugar and beat on high speed until we have a mixture like cream.

● Add the natural lemon juice and butter and beat again until all ingredients are homogeneous.

● We prepare the coconut, then pour it on the mixture and stir it using a hand mixer or a fork.

● We bring paper templates or any containers available at home, preferably of the non-stick type and of small sizes.

● We pour the mixture into the moulds, provided that they are not completely filled to allow the cake to inflate without affecting its shape.

● Preheat the oven, put the molds in the oven at a medium temperature on the middle shelf as well, for a period ranging from twenty minutes to half an hour, until they are cooked and browned on the sides.

● The face is slightly reddened.

● Take it out of the oven and leave it at kitchen temperature until it cools down.

● Put the coconut molds on the serving plate, and each piece can be decorated with a spoonful of cream and a little pistachio and coconut.

● It is also served with cold fruit salad, which is prepared immediately before serving. The best and most delicious types of fruits that are used with this dish are strawberries, kiwis and pineapples, with a few slices of banana and apricots, and a glass of natural orange juice.

● Fruits are cut into medium-sized squares, mixed with each other, and then orange juice and a spoonful of natural honey are added.

● Serve cold with coconut tablets.

● It is preferable to take care of young children from eating coconut tablets because of the difficulty in swallowing and chewing.
